These are so delicious and extremely quick and easy to make. They are low in fat, travel well, and make great party appetizers if you simply cut them into thirds. But my favorite reason for making them is this: I can pack a TON of romaine or leaf lettuce into every single wrap -- and my family gobbles them up! Leafy greens are THE most nutrient dense food we can eat -- and these wraps are loaded with greens!. While there are many delicious vegan mayonnaises that you can buy at stores now-- like Vegannaise, and Just Mayo, (and anything vegan is always cholesterol free!) these products all use a lot of oil in them, making them off limits for those following the guidelines of Dr's Esselstyn, McDougall, Goldhammer, or Fuhrman. Thanks to the Briliance of Bryanna Clark Grogan, I can make my own completely oil free Mayo -- by following her recipe. It takes me about ten minutes to make, and is ready to use after 2-3 hours of chilling in the fridge to become thick. The Beyond Meat Strips do have a tiny bit of oil in them (not much since the entire package contains just 12 grams of fat). One package of Beyond Chicken Strips will make about 20 wraps.

- Find a large shallow container (a fry pan might work) that is large enough to dip a single rice wrapper in all at once. Fill it with about 1/2 inch of water and set it on the counter.
- Pull apart the heads of lettuce into individual leaves. Wash them and pat dry with a towel.
- Take a rice wrapper and submerge it in the water quickly, pull it out and tap to remove excess water and then lay it on the counter in front of you. Repeat this with about 3-5 more in an assembly line. It takes about a minute or two for the wraps to soften and get that perfectly sticky for rolling -- that is why I do several at once -- by the time you get them all laid out and ready to roll, they are ready to roll up.
- Now carefully arrange lettuce leaves on the lower half of each wrap, set a chicken strip right in the middle of the lettuce horizontally and then drizzle spread about 2 teaspoons of the mayo on top of the strip. Carefully fold the left and right sides of the wrap in about an inch and then roll the thing up starting with the part nearest to you.
