We are LOVING these strawberry shakes. This recipe makes two large shakes -- but that never seems to be quite enough...
The stevia extract is not absolutely necessary, but it does add a little bit more sweetness, without adding more calories or sugar. If you want to make these without using any tree-nuts, you can omit the cashews and the cup of water and instead use 1 cup of coconut milk or soy milk.
Ingredients: 1 cup of water 1/4 raw cashews 4 Deglet dates, pits removed 1/2 teaspoon vanilla extract 3 bananas, pealed sliced and frozen 15-20 medium sized strawberries washed and frozen 15 drops liquid stevia extract (optional) Directions: 1) Peal and slice the bananas and place them onto a parchment paper-lined tray or plate in the freezer. Wash and remove the green stems from some strawberries and place them onto the parchment paper lined tray and freeze them too. 2) Once bananas and strawberries are frozen solid, place the water, dates, cashews, vanilla extract (and stevia if using) into a powerful blender and process on high until completely smooth with no pieces of date or cashew visible. 3) Add about 15-20 frozen strawberries (just keep adding them to the liquid until the level reaches 2 cups.) and process again until smooth. 4) Add the frozen banana slices and process one last time until the shake is thick and creamy, then divide between two large glasses and serve with a silicone or metal straw. |
